Cerise Cassée #1

American Sour ale - Limited Release

Found tucked away in the furthest back corner of our walk-in cooler, this little 5 gallon keg has been hiding for years. Seven, if the faded Sharpie scribbling on its side is to believed. This beer is the last remnant of our first expression of Cerise Cassée, which was sour mashed, blended with tart cherries, fermented with our house ale yeast, and then split into three different versions. Aged a brief six months in used bourbon barrels, it was then kegged up and left to become its own little time capsule. No wild fermentation, no lactobacillus, pediococcus, or brettanomyces was added. Instead we get to enjoy clean, clear acidity, cherry flavor, and a faint hint of oak. This’ll go fast, so get in here asap!
